Healthy Mini Banana Muffin Recipe
Have you bought food for your little one and read the label and found ingredients in there you didn’t understand? When I became a parent for the first time to Emilia, I often found there were all sorts of nasties in baby and toddler food.
So I began to experiment and make Healthy and simple treats for Emilia and now for my second daughter, Adelyn too. I knew that if I made the treats for Emilia and Adelyn, then I would know exactly what went into their treats. I want to share some of our favourites so that you can also try them at home for your little ones.
Here is my recipe for Healthy Mini Banana Muffin Recipe:
Ingredients
- 1 cup of self-raising flour or 1 cup of plain flour of your choice (i.e. wholemeal, spelt) and 1 teaspoon baking powder
- 1 egg
- 1 ripe banana
- 1 pear
- ½ cup olive oil
- 1 tablespoon honey or maple syrup (optional)
- 1 teaspoon of vanilla bean paste or ¼ teaspoon cinnamon
- 1 tablespoon of milk (cow or an alternative is fine)
Method
- Preheat oven to 160C Degrees Celsius (fan-forced) or 180C for conventional oven.
- On a plate, mash the banana with a fork.
- Place the oil and egg in a bowl and whisk until blended.
- Add the vanilla bean paste (honey or maple syrup optional for this step) or cinnamon to the oil mixture.
- Add the oil mixture and bananas alternatively to the flour and gently blend with a spoon or whisk.
- Add the milk if required.
- Spoon mixture into greased muffin tray or muffin patty cups.
- Bake for 15–20 minutes or until cooked, test with a toothpick or skewer to see if it comes out clean without any batter stuck to toothpick or skewer.
- Take muffins out from muffin tray and cool on cooling rack.
